Ingredients For Milk-Poached Fish:

  • 1 [3-pound / 1.4-kg] fish
  • Cold water
  • 1 tablespoon [15 mL] coarse salt
  • 2 cups [500 mL] milk

Directions For Milk-Poached Fish:

Cut fish into individual servings.

Cover fish with cold water; sprinkle with coarse salt.

Soak fish for 5 minutes; drain.

Pour milk into a 6-cup [1.5 L] dish.

Cover; microwave for 2 minutes on ‘MAXIMUM’.

Transfer fish into boiling milk.
